I'm looking at potentially getting the Old Man Mountain Divide thru axle set, or possibly switching back to the stock fork with three bosses on each side for mounting panniers. Any input is greatly appreciated!

I’d just use the stock fork and avoid spending more money on something that can be fixed by using everything cages
A fork-mounted rack will likely overwhelm that suspension fork unless you can increase the spring weight
