I currently ride an FX2 XL but looking into upgrading to a Domane. 6'1 with a 32ish inseam based on these photos what would be a better fit? Blue Domane – 58cm, Light Color Frame – 56cm. Thank you.

I would recommend the 58 minimum. Might even want to try a 60.
I think it will depend on whether if you want to be more upright or not. 58 would be more upright. Choose the one that you feel more comfortable on since preferences and use cases are not universal. As well as physical capabilities. Just my 2 cents.
