I am looking at picking up a Grizl 6, but I fall right between x2 different sizes (158cm height, 71.5cm inseam) – which would be the better size to opt for?
Canyon customer services have just said '3XS for more agile / aggressive vs 2XS for more stable / comfort'… I currently own a Trek Marlin 7 MTB in Small, however I've realised a gravel bike may be better suited to my style of riding (not one for the trails anymore!) & I'd love to do some bikepacking.
So this will be my first drop bar gravel bike.
The Trek Marlin is comfortable, but does feel a little large & awkward at times especially on the reach.

It appears you are looking for bike fitting help. Please make sure you post as screenshot of the Canyon size chart for your bike, with your point in it. See [this example](https://imgur.com/a/ALUfXyy)

I’m also conscious it recommends a saddle height of 623-633mm for my leg length – looking at the geometry charts the 2XS lowest is 623mm – whereas the 3XS would have much more room for movement…

If you’re between two sizes for the Grizl, you can choose. Smaller means more agile/direct and sporty. Larger is more relaxed (for longer rides).
I was also between two sizes and took the smaller one and I am very happy with it.
3XS all the way, you’re right at the bottom end for both metrics with the 2XS it will fit but it will feel big and you will have to pretty much have the saddle slammed, whilst minimal you’re missing out on some flex and comfort there as a result also.
The 3XS will have you right on the money for saddle height and seeing as you’re at the top end of the scale it should be more nimble, lighter and easier to throw around
