I just started bike commuting! I live on a 3rd floor apartment with beveled ceilings. The wall mount grabs the pedal, and so most/all of the weight is being held by the pedal. The guy at my bike shop said it shouldn't be any issue. What do you guys think?

Pedal threads are going to eventually strip.
I’d worry about damage to the pedal. With it fresh it’s probably fine, but could see it wearing and the plastic eventually failing. Holding all that weight can’t be great for the bearing either, wouldn’t be surprised if it leads to play sooner than otherwise. Might be better to to a strap around the seatpost or frame.
I think you’re fine. Pedals are not expensive — like $20 and easy to replace yourself — and if this is the easiest way to hang it then the convenience is likely worth the cost of a worn pedal bearing or plastics far down the line.
Depending on the material of your ceiling, I would be more worried about the stability of the plaster and the possibility of your whole bike falling down and possibly ripping a whole into the ceiling.
If the ceiling can hold that weight, a strap on the frame might be better than using the pedal.
A vertical bike stand might also be an option.
Considering the loads that go into a pedal spindle when you’re pedaling uphill, I think you’re going to be fine. Plus it looks really cool!
Looks like those walls/ceiling is already pretty damaged.
Not an issue probably… for the bike.
Should be fine. What about you back lifting it up there. Or if that pedal loses grip, your noggin
Probably not other than having a lateral force on it. Why not just hook the frame but whatever.
Bikes are tough. You could probably hang it for years with such a minimal force on the bracket or crank that will equate to one miles worth of stress for every 1000 you actually ride.
