And my chain keeps falling off and pulling up on the carbon chain stay. How can I fix the damaged area? Also I’m using a 3mm offset and probably need to use a 0mm one.

You need to have your shifting re-indexed. I’m not sure from what you said whether it is the front derailer or your rear derailer that’s causing the problem but one of them is, have someone fix that for you.
