How would you convert a Roadlite Ultegra (with 105 shifters) to a 1-by-11?
Riding mostly in flat Berlin. Rarely anything steep.
I’m tending towards going with a complete swap (mech, shift, cranks) to DEORE or SLX.
GRX would also be an option, there is no matching shifter though, if I’m not mistaken.
Swapping just the chainring would not look as neat and would limit lowest gear gear in the cassette to 40.
How would you do it?

I think a GRX81x 11-speed crank will fit too.
Only check with Canyon if this is supported.
If I remember correct this frame or it’s successor was also delivered with 1×11.
You can use the 11speed 105 flatbar shifter with the grx 812 rear derailleur
Removing ultegra from bike for gravel setup must be some sort of a crime. Just kidding, good luck!
