I've been struggling with gearing for the past year. I live in an area with very steep hills. Short, but steep. I was dead set on making 1x work, tried a smaller chainring, bigger cassette, etc, but it was always a compromise. A bad one at that. Either too hard on the way up, too easy on the way down, etc.
Finally gave in and slapped on a GRX 2x with an 11-42 in the back. The RD needed to be modified by swapping out the cage for the M8000sgs cage to take up the slack in the small ring X last two small gears, but other than that, worked straight away.
Loving the range, and I'm also unexplainably happy with the silver limited edition cranks. Call me old, but silver rather than black is a nice change. What's old is new, or whatever they say 🙂

Silver GRX cranks are sexy!
G’damn I’m getting impatient for my Lynskey to ship. Sick build, love the manual dropper and the top tube bag looks like a nice match.
I’m totally down for 2x and love your GRX setup. I’m jealous.
But what I understand that’s been hampering you is gear ratio. Having the 2x just provided you with a good gear ratio, the same achievable with 1x. I just went through a similar process as you, but ended up going with a 1x. 1x did limit my upper range, but I rarely use the upper range, like I need to be going downhill with the wind behind my back to hit those gears.
I just got my Lynskey GR400 frame and I will be 2x GRX, and will be figuring out the 11-42 also. It seems like there are a couple ways to do it, ill check your method out.
I presume this frame came with a mounting point for the front derailleur?
