I'm about to go on a bikepacking trip with friends in a few weeks, but I'm a 100% rookie.
My bike is a gravel (Cannondale), and I have 37mm tyres which seems to be quite big for more than 250km on roads.
What would be your recommendation in terms of tyre size? Do you have any model to recommend?

Hard to say without knowing the terrain of the “path”.
I would assume that you could use 30/32mm GP 5000s and be fine.
I like the Specialized Pathfinder for mixed terrain with a lot of roads.
