I got a gravel bike, but it is a bit big, so I want a one-for-one exchange. I am currently using a Cube Nuroad SL 2020 with a GRX 810/600 setup. The Van Rysel has a SRAM Apex 1×12, but I am open to other options my budget is about €1750.

GRX 800 and Apex are both nice.
You can get a radon regard frame (which is essentially the same as the nuroad) for 500€ and swap all your components over for a fraction of 1750€. Have you considered that?
