Also is it normal for the front derailler to shift down first click and the i need a second downshift for the derailleur so the chain doesnt rub?

  2. Either the derailleur is setup incorrectly or the chain is too long. What does it look like in big/big?

Your derailleur is not derailleuring. Check on that, it supposed be extended keeping the chain in tension

  4. Ya, that’s too long. You need to cut a few links out. When in the little gear up front and little in the back there should be a small amount of tension on the rear derailleur.

So, when I adjusted the Ultegra R8000 derailleurs according to the Shimano manual (which states that the derailleur cage should be as close to the cassette as possible), in some gear combinations with the smaller chainring the chain was so slack that when no force was applied and I rode over uneven surfaces, the chain touched the frame at times. It shouldn’t behave like that, so if I were you, I would use that screw to shift the derailleur cage a bit away from the cassette. Unless your chain is too long—in which case you should shorten it.
