Checking my chain length – with 1 link removed it still has maybe a mm or two of slack in the chain when in little/little, and with 2 links removed it has 0 slack and engages the rear derailleur arm.
Should I remove 1 or 2 links – I will never use this big/big gear but it looks pretty short to me, but I also want to make sure it is not too long so it doesn't drop the chain.

If you have already taken 2 links out of the chain there’s no real way to safely add links back
Is the cage long enough for the cassette?
Don’t size in big/big. Size in small/small to obtain the longest chain possible.
Two links removed is putting a lot of pressure on the B screw when big/big. Maybe just try to avoid little/little.
1 link looks better. You likely need to go into your small/small and adjust the B screw.
