Which saddle for 80s Bianchi?

I decided to fix up my father-in-law’s 80s Bianchi, even though I am not a fan of the Shimano Positron.

It’s mostly original, apart from the saddle. Which saddle would you recommend that fits the rest of the bike? Also I am still not sure which bar tape goes well with the rest of it…
