94 zazkar build with surly corner bar. Set up 3 x8 at moment but thinking of going 1 x11 and getting carbon forks to lower weight. Any tips as new to bike building

I would go for a lighter wheelset instead of carbon forks.

I’d stick to 3×8. Way more Range and personally i don’t like the look of 1x drivetrains on older bikes. But that’s up to you.
Getting light/high performace Tyres with tpu-Tubes can make a huge Difference in Weight and rolling Characteristics, more than most other modifications imo

I just finished a GT project and was looking at 1×11. Check out the CUES system, or for a little less, the Acolyte system.
But I ended up sticking with a 1×8 and kept my shifter/derallieur/cassette (11-32). I’m more of a masher and the bigger gear ratio jumps don’t bother me, and I’m also cheap. When I need to replace the cassette, I’ll probably install a 11-40 with the addition of a derailleur extender.
If lowering weight is your priority start over. The steel fork will handle much better than carbon, especially if you like your wrists. It may be marginally lighter but it will shake you up and suck to ride. You got a cool bike but you will be way better off focusing on comfort and rideability. Keep the 3x.
This is the bicycle equivalent of a mid 90’s GMC Jimmy. Trusted platform, lots of compatible parts, reliable, utilitarian. No matter how much money you dump into it it’s never gonna be a sports car and putting a 1x drivetrain and carbon parts on it will just make it lass fun to ride and more expensive.

Just leave this alone. Get a new frame and put new parts on it.
