I lost the keys to my Bell 300 Catalyst U-style bike lock (12mm hardened steel). What's the cheapest way to get it removed? Ive gotten a couple of Locksmith quotes at $150-$200 which seems like too much. found a YT video where you can pick it yourself but I'm not sure I'll be able to do that successfully

Why don’t you try it and see?
Depending on the age of the lock, contact Bell customer service. They offer a replacement key for free within certain criteria. But go look:

Find a tool rental place, rent a cutting wheel grinder and some safety glasses and cut it off yourself
Thrift store angle grinder, eye pro, and a cutting disk. All in for 20 bucks
Home Depot cordless grinder, keep the receipt and return after. Cutting wheels are $3. Not the most ethical, but you asked.
Or ask a local bike shop or co-op if they have a grinder you can borrow/rent.
Just cut it off
Breaker bar and twist. Smack she shit out of it with a sledge. Cut it. Most locks are pretty easy to break.
Harbor Freight is your friend.
Just about anything will go through that lock like a hot knife through butter.
