I got this fuji bike bike out of a thrift store in the Philippines and wonder which model it is and can it actually be used for bikepacking/touring. Also I never actually tried ever bikepacking/touring and am planning to try when I finish my shipboard contract (seafarer). Any tips how I would start? Thank you.

That’s a great bikepacking bike. Get a frame bag, maybe a seat bag, start with short trips.
The frame has eyelets for attaching a cargo rack, so that’s a way to carry some luggage. Or frame bags and seat bag.
Maybe there’s room for slightly bigger tires, maybe go up from 35mm to 38mm or even 40mm. You can check how much clearance there is between the tire and the frame both at the front and rear wheel. You need to leave at least 5mm of space for safety. Mud can cling to the tires and that causes problems when there isn’t much space between the tire and the frame.
