I am buying gravel bike with flat bar (Cube Nulane Pro https://www.cube.eu/de-en/cube-nulane-pro-fe-fireorange-n-black/856500). I have no experience with gravel bikes, I own an old city bike.
When I tried the bike in store, the handlebar seemed quite wide to me, it has 66cm. How wide would you recommend to make it? They can cut the handlebar in store still to make it more narrow, they recommended 1.5-2cm from each side. Should I aim to make it shoulder width or considering it is sort of mtb handlebar rather leave it as is?
I will be riding mainly in the city to commute, a lot of stop and go, will install wide mtb pedals in it but other than that expect more city and less gravel routes.

How tall are you? For the size 56cm and up, 66cm handlebars seems right. That’s what I have on my flatbar hybrid/road bike (size L). If you’re shorter and getting a smaller size, perhaps shortening the bars could make sense. For my hybrid, the sizes XS, S, and M come with a 60cm handlebar.
Either way, I might suggest riding with the bars as they are for a few rides and see if you still think they’re too wide.
