Sealed bottom bracket install going well so far – but is this black ring supposed to be removed somehow? Can’t see it on any instructional videos, but also can’t figure out how/if it comes off.

No. It stays. It’s a protector for crankset so water and mid don’t get easly between it and bb shaft.
Yep it’s so the pedals can be safely installed.
The small black spacer on the BB spindle is not supposed to be removed.
Shimano even have it shown in their documents for the BB-UN300. Zoom in and you’ll see it, it’s in the same grey shaded colour as everything else.
