I broke one of these “ears” off a set of Dia Compe brakes. For the purpose of buying a replacement, what is it actually called?

I think it’s just a “Tire Guide”. It used to funnel the tire into place when installing wheels.
Some brake pads come with them .

Intended to help with fast wheel changes from your pro team mechanic when you get the flattened tire on ye olde onwardes and upwardes roades. To ensure that your 18mm wide tire doesn’t get jammed into the seat stays on those inconvenient occasions.
