I am looking into buying a second hand Canyon endurace CF 7 eTap 2022 model size large but would like to know the offical stack and how many mm flexibility there is to play with. How much can the handlebar be raised? Is it possible to flip the stem and add spacers? Need to get the handlebars as high as possible.

You should be able to find the stack measurement on 99spokes.com.
As for spacers, maximum is 27.5mm worth on this Endurace, it can’t go higher as there no more steerer to accommodate.
