As other posters have said, clear mineral oil is pretty common. As far as I know, Shimano does not make brakes compatible with DOT fluid (and never has).
Therefore, if it is a Shimano brake and it’s still functioning, I’d assume it’s mineral oil.
But, mineral oil is oily and DOT is less viscous I would say is the easiest difference. DOT can burn your skin, but don’t try that…

Mineral oil comes in many colours, Shimano aftermarket is pink but it may well have been bled with another brand.
The factory stuff is pale yellow

These brakes are 15 years old – BR-M775 – and who knows what mineral oil the previous user has filled. This looks green to me. Green is usually Citroen LHM+, which works perfectly fine in mineral oil brakes. DOT is brownish-yellow, but some mineral oils have the same colour, too. Add a few drops of this liquid into water. If it swims on top, like oils do, then it is mineral oil, if it dissolves, then it is DOT.
