I've been riding the old Grail in size M since 2020 and have no complaints and find it very comfortable even on rides beyond 8 hours.
I would like to buy the new Grail, but in size M the reach is approx. 2 cm longer and the stack is 1 cm higher.
For my height (179 cm) and inseam (86 cm), Canyon recommends size S or M. I'm worried that it might be too small in size S.
Could I ride a new Grail with 2 cm more reach and 1 cm stack?

It appears you are looking for bike fitting help. Please make sure you post as screenshot of the Canyon size chart for your bike, with your point in it. See [this example](https://imgur.com/a/ALUfXyy)
