Looks awesome! I just installed the sks speedrockers on my gravel bike (make sure to get the XL version if your tires are larger than 42mm). They don‘t look as sleek as properly mounted ones but you can install and remove them (after the initial setup) within a minute. So they are also great to spontaneously put on in the summer if the weather forecast says it might rain. If you want the super minimalistic version you should look at asssavers (e.g. win wing), but I don‘t have any experience with them.
