Rear shock size is 7” (180mm) if I measured it correctly. Eyelet to eyelet . I can’t seem to find anything in a rock shox for those measurements in an air shock. Can I put on a 6.5” or a 185mm ? Those are available.

6.5″ is significantly shorter. You can, but it will make it ride weird.
Good luck. Nothing rockshox makes today is readily set to fit in that frame. The measurement you need is the eye-to-eye and the stroke length. Bit I doubt you’ll be able to find something modern that will fit in there. It will probably take a couple 3rd company spacers and a set of DU bushings from yesteryear.
