I used to have a 2017 Aeroad in size S, for 5 years, and was quite happy with that. Sometimes however it could feel a little short, but I liked how responsive it was. Was using all the spacers for the bars. The 2025 version is a little shorter and taller and I'm thinking of going for M this time. What do you think?….

You are within the M box, and S feels short. What else do you need to hear?
I’m basically same size as you, 178,5/82,3 and went for size M Ultimate. I have 165 mm cranks tho.
Sometimes it feels a bit short, size S would’ve been way too small.

I’d go with M.
For what it’s worth, I’m 178/86 and after a bikefit was advised on an M Aeroad with 90mm T-bar.
