I basically want to make this into a touring bike. I’ve wanted to install my previous bikes panier racks on to this one if it’s possible?
I’m also a 1.8m tall and around 93 – 96kg weight.

I’d rather spend a bit more and get something nicer, but it’s certainly a bike
No, sorry. As u/BeardedBaldMan has said GCN have already looked at it, and even after upgrades don’t think it’s worth it. For starters the brakes are apparently terrible, and upgrading them is not straight forward.
Look to buy something second hand, and you probably ought to double your budget too.
