CF Endurance Road Bike under $3,000?

I am looking to upgrade my current bike (a 2016 Diamondback hybrid bike).

I will be using this new bike exclusively for longer rides (5 miles and up). Not for commuting. For this, I would like a nice mix of comfort and speed. This was the only related post I could find on this question.

There seems to be a couple of CF options under $3k in the market and was wondering if anyone had insights into these options or others I might not be aware of.

Some things I am looking for:

• Full carbon frame
• Tyre width in the 28–32 mm range
• A bike I can upgrade over time with some ease
• I keep reading to aim for at least a mid-tier Shimano set, but I honestly don't know enough about how different they will be for my intended bike use.
• While my budget goes up to $3k, if there is a good deal to be had under, say, $2.5k or $2k, even better
