Polygon Strattos S5 (2nd Hand), full 105, with Ultegra Rims. Listed as Lightly Used. Is it worth 380 USD? For context, I am quite new to cycling. Another option I have is am Triban RC120 for $190. Would that be a better fit for me? Or is this Strattos ultimately more worth it?

I’ve never heard of either one. But judging from your photos, the Polygon is worth the price asked. The 105 group set has well performed over the years and the Ultegra (a notch above the 105 group) rims are certainly a plus. An eleven cog cassette is an indication that the bike can’t be that old. Go for it.
if it fits you the polygon is a good deal. I think it’s a 2018 model year. The Triban RC120 is a good budget bike but nowhere near the same tier of components
