I’m about to start a one week trip in Germany as well on Sunday, and I am also not quite sure about my luggage yet.
I have way less clothes (2bibs, shirts, 3 sock pairs and one hiking trousers for casual)
Only snacks for one day because there is always a possibility to refill them.
But I don’t see any hygiene stuff and no real meals to cook.

That’s a lot of heavy cotton clothing. Merino is light weight, can be worn multiple times without getting overly ripe and will keep you warm even if you’re wet. Leave the jeans behind and honestly you only need a few pairs of socks. Wash em in the river and dry them on your rack when you ride.
Get some healthier higher macro snacks, Oreos and candy ain’t gonna do it if you’re pushing for long ass days.
