Picked up this Gen 2 Undefeated frame/fork for a song, and plan to do a flip/flop (have never done true fixed before, please forgive me) 17T with 48T up front. I have the bullhorns I intend to use, but looking for recommendations on wheels, stem, crankset, brakes, and seat post. Or any other insights you fine folks can offer. I’d like to keep things as light as possible while also not taking out a second mortgage. I’ll be doing mostly city riding on terrible streets and some nice paved pathways. TYIA!

Honestly? If you’ve never tried fixed before, why not just dive straight into it with only a fixed cog? Just run it with both brakes and ride slow to get used to the feeling of the pedals always spinning, and if you’re feeling daring you can take the rear brake off to see how it feels.
Anyways, as far as parts go, you can go crazy on the bike. Ride your ride, but if you’ll allow me to make some recs, I think a Miche Pistard Air crankset would look awesome on it.
Rims are more personal, but hubs are pretty straightforward and there are hardly any that would be deemed “bad”, at least when looking at the more popular options. I always go for Shimano Dura-Ace track hubs just because of the looks, and I can definitely see them fitting your frame pretty nicely, especially with the colorway it rocks.
And since you’re gonna ride with brakes, why not go baller with the tires and choose some GP5000s with latex tubes?* trust me. you’ll feel insanely quick if you don’t rock that setup already 😉
*good stand-in could be a Gatorskin in the back to maintain some skidding potential. and for tubes, you can buy cheap TPU tubes in bulk thru AliExpress and they’re about 90% as good as Latex + they don’t lose pressure as quick. however many TPU tubes can’t handle long descents on rim brakes because of the heat generated by the braking, so have that in mind if you live somewhere hilly.
In any case, most of it depends solely on your budget and your tastes, and you have no reason to buy expensive things just because some schmuck on the internet (me) told you to. That frame’s awesome and I bet whatever you come up with will inevitably look good. As long as you don’t choose one of those horrendous magnesium trispokes that fill this subreddit all the time, or some Thickslicks. Eugh. /s
Chains too tight
Basically any sealed bearing hubs will be absolutely fine. Pake cranks seem to be pretty good value for money, I’ve raced 3 seasons of cross (as well as regular riding) on mine and they’ve held up great. Pedals depend on whether you’re going straps, clipless or cages but for straps, most nylon bmx pedals hold up great.
