First build, but got the freehub body wrong on the wheelset. Instead of the intended CSM8100 cassette, I tried installing a 105 cassette instead.
Groupset is a GRX820 1x. High gears work fine, but going into low gears it starts getting confused.
Other than compatibility issues, are there any other issues that might be causing this? (just wanna understand further)
Would I run into problems if I run these for the meantime?
Explain? (Newbie trying to DIY)

Did you go through the steps to do a deraileur adjustment?
I think your indexing is off, go to yt and check how to fix that
Lol I first commented go look at the park tool rear deraileur video but then deleted my comment because I thought it had something to do with you swapping the cassette
This looks like way too much b tension (i.e. the upper pulley wheel is too far from the cassette).
Also, if some gears work and others don’t, your derailleur hanger is probably misaligned. Even new bikes usually need to have the hanger fitted on 11 speed or higher setups.
while in the lowest gear, remove the cable from the derailleur. Set your limit screw to align your chain with the first gear. Re-attach cable. Spin wheels and shift to gear 2. Hopefully your tension is correct and it doesn’t hang up or skip ahead. If there’s an issue, adjust the tension to align the 2nd gear. It looks like your high limit screw should be good. if all is perfect and you still get a little skip, then you have to look at if the derailleur hanger is straight. You have a lot of Youtubing to do. Best if you could have a friend show you.
The 822 smallest gear is about 40 or 42, 36t is too small to them, but there is no 40 or 42 t 12speed shimano cassette. If you run it on 11s big cassette, it should be fine. The cable pull ratio of 11 & 12 speed shimano is the same to each other.
If you want to use the 12s 36t cassette, buy a RX820 RD, it’s the 105 RD with clutch, not RX822.
So you have a derailleur setup for a 12-speed cassette, and you put an 11-speed cassette on it. This will not work because the spacing between the sprockets is different.
