Just refreshed after a few years mostly riding my commuter and cross check. Original drivetrain (9spd ultegra) and wheels (dura ace hubs). Managed to sneak in 28s.
Over winter need to figure out a decent looking group to setup a compact crank and bigger cassette to make it mountain friendly.

You might also consider trading the 52/39 (?) crankset for a triple ring crankset. I was once able to install a 50/40/30 crankset on a Vitus frame. Needed to replace the original Ultegra front derailleur with a longer cage mountain bike derailleur. And everything worked out fine.
Consider going with a triple crank. A very good, moderately priced non-compact triple is the Stronglight Impact. Old school good looks to match your gorgeous Waterford. [You can get one from Peter White Cycles for $190 with chainrings, plus tax & shipping. The BB with aluminum cups is $56 more](https://www.peterwhitecycles.com/str-cranks.php)

I have dura ace 7700 triple on my Waterford 1900 adventure cycle and it is super dreamy.
