I have a later model of the Aeroad CF SL8 with Mechanical Ultegra which came with the CP0030 Cockpit. I’ve recently noticed that on other bikes that come with the same Cockpit (Endurace/Grail etc) they have semi-integrated cable routing into the head tube via a slightly different spacer kit which has cut-outs to allow the cables to be routed.
My question is, if I purchase the spacer kit and cable clips, could I essentially do the same thing on my Aeroad or is there something I’m not considering?
Can you actually route cables through these forks in the same way?

No, you need a different fork and canyon doesn’t sell them.
