Convert this old steel Charge Filter to gravel?

So I inherited this bike a few years ago and it’s just been stored in my garage. The owner rode it maybe five times. It’s pretty much new. Tiagra groupset shifts well. Mechanical brakes need adjustment, they pull all the way to the bars.

I’m no mechanic but can do basic bike stuff. I come from a MTB background but have been riding my Giant Revolt more than any of my bikes. Was going to sell this off since I have so many bikes, but thought I’d see if I could swap the wheels and tires for something more gravel friendly. No idea what would work, as my bikes are mostly stock as they come. Planning on removing all fenders and racks. Is it possible or even worthwhile? Would be cool since Charge no longer exists in this form.
