I’m 5’11 with an inseam of 32 inches. For the Aeroad CF SLX 8 AXS, it shows the I should be getting a Medium size. But, I am on the lower side of the scale. Should I go for the Small or the Medium?

You are well inside the M box. That is the purpose of the box. You don’t have to be in the geometrical centre of the box to be of that size, you just need to be somewhere within the box.
I’m 5’11, 33ish inseam and M fits me like a glove
