you can only stop as good as your tires can stop. if you can lock up the rear wheel with V-brakes (imho, good pads also help) then you’re not going to stop any better. also v-brakes are just easy to live with.

Your fork is disk compatible but would require a new front wheel, as your front hub is not disk compatible.
Your rear wheel is not disk compatible, nor is your frame.
