Every. Single. Time. I try to remove a casette, I hurt myself. When removing a drive-side pedal, I also hurt myself, but today is probably the worst I've had happen to me.
I just don't understand: how do y'all remove these components without slipping onto the chainring/casette? Is it a technique thing I'm overlooking??

Check out YouTube. There are many videos for both situations
Proper mechanics will prevent this! Use gloves and the right tools!

Put your chain on the big ring so you don’t get ripped up
Set the crank arm at 90 degrees, and the pedal wrench at 180 degrees (both parallel to the floor). Put one hand on the pedal, the other on the wrench, and push straight down. Let your body weight do the work. Your knuckles should be traveling away from the rings, which helps prevent injury.
Push down on the pedal (with your foot), pull up on the wrench (with your hand). Same method on both sides. Once you do it this way you’ll never have pedal issues again. https://youtu.be/qTtxoheAG10
Put the pedal crank facing the front, put the spanner facing the front and push on it with your foot using your body weight.
Push the wrench to the floor/away from the chainrings and you won’t get bitten. It also helps a lot if you put the chain on the biggest ring if you have to push into the bike to get the pedal off.
Gloves
Everyone else has good advice, so I am gonna add this: make sure you grease the threads when you put them back on. This not only makes it easier to remove next time, but also prevents thread damage. Most threads should be at least lightly greased.
