I just got my grizl, and have assemble it.
When i kick the pedals around, the wheel will start to spin. But as soon as i stop the pedals, the wheel will stop too
Shouldnt the wheel keep spinning and maybe make some kind of click noice?

Is the disk rotor rubbing against the pad?
Seconding the disk rotor comment. Do you hear any sort of scuffing noise? Seems like the brake might be touching the bad
The click noise usually comes from the freehub. Without knowing which exact model you bought, I’m guessing it has the dt swiss wheelset. The freehub at the dt swiss road wheelsets used by canyon is very silent meaning it makes almost no sound!
The stopping of the tire on the other hand sounds like bad adjusted brake calipers. Loosen the bolts that fix the rear brake caliper to the frame. Pull the rear brake slightly until both the brake pads make contact with the disk and then retighten the bolts of the caliper.
Your brake pads are touching the brake disk and cause braking. You have to loose the bolts of the caliper a bit and try to reassemble the caliper properly, so that there is a little space between the disk and the pads at each side. There are plenty of YouTube videos for helping you.
EDIT: Sometimes it helps just to loose the bolts a bit, let the backwheel roll and press slowly the back brake until the wheel stops and then tight the bolts again while still pressing the brake.
