Looking to pickup an aeroad but torn on what size to get. I'm 5'11/71 in/180 cm with a 32 inseam (80.3 cm) so fairly short legs for my height. Canyon recommends a M frame but I've always heard they run a bit large. Do I stick with the recommended M or so for a S?

“They run large” is already accounted for in the chart. You are in the middle of M, go for M.
I’m very similar build to you (179cm, 80 inseam). I wnt with a M Endurace CF7 etap. It was the right choice for me. I did get put on a shorter (90mm) stem but I am not an ageessive rider so I appreciate the little bit of extra stack height for comfort on long solo riders.
