That’s a very expensive way to take a beautiful and practical bike and make it less beautiful (IMO) and less practical, but it’s yours to ride. Have fun!
I think regardless of what you do to it leveling out those racks is a must to make it look nice.

youre gonna need to buy two expensive chains to be able to reach!
It looks like a clean restomod. If you have the budget, a silverish chain ring would complete the look.
If you live in flats then nice 1×7 conversion (I bought a bike with 12sp 11-51 and don’t use last 4-5 gears 🙂 ). But from the looks point it’s very nice. But you have to work a bit on it to make it perfect.

Tbh 2x on an Appaloosa is the perfect setup.
Something about the geometry of this bike looks really wonky to me, but it’s probably just me.
