I have a set of Omnium cranks and a Surly hub wheelset I've been wanting to use. I'd really like an All City Big Block but I'm not stoked about 25/28c tires.. I'd set the CC up with a flat bar and brakes since I'm new to fixed riding. I will also be using a Surly Tuggnut to secure the rear wheel.

Dude this bike is sick. As much as I love fixed gear, this thing deserves to live as-is. Just get a Steamroller and build a companion
If you get a vintage bike with 635 etro / 27″ wheels and put 622/700c wheels on you’ll have a ton of tire clearance.
A steamroller will take 38c but you could just get…. A second Cross Check. 😏

Fixed Cross Check is rad. If you want something with snappier handling find an old rim brake Nature Boy. If you want something with better tubes and more relaxed geo get a Black Mountain Cycles Monster Cross.
I’ve had all three for a couple years each if you want a comparison. All fixed, all with drop bars and brakes.
Don’t. That’s a nice bike, just build a different one
