I haven’t received the stem yet but, in preparation for when it does arrive, how do I know how many Nm to tighten the bolts to? Or does it come with instructions? I have a CF frame (Grizl CF SL 6 AXS) so I want to be careful obviously with how much I tighten them.

4-6 nm in most cases. In doubt 4 but 5 is the gold standard. Most parts have the required torque written on them near the bolts. You can also consult the customer support of the supplier.
