Pirelli Cinturato gravel H or M depending on the chunk you plan to ride. Great tires!
Yah, WTB gravel tires are no bueno. I’m currently running a set of Perelli Cinturato Gravel H’s in 35 mm but their to narrow (found in the clearance bin of my LBS). Pathfinders are good but I’d push the size to the maximum you can get on that bike.
Have the Pathfinder Pro in 38 and they are great! Go as wide as you can.
Schwalbe G One R or RS. If you want to get freaky, do the RS in back and an R upfront.
Path finders are up there with the best of the best, and so are the offerings from Pirelli. Goodyear makes some sleepy good gravel tires too.
Tufo Thunderos! Super fast rolling and hookup great.
Rocking some Goodyear County’s which are good for my blend of road/gravel.
You should probably ask your shop to re-route that front brake cable/housing while you can…
I use Schwalbe G-One Bite on my Wilier Jaroon and they are great, both on asphalt and off-road. In my opinion a very good compromise between smoothness and off-road grip. I recommend, whatever you decide to mount to go tubeless, still smoother and no risk of punctures.
If you want the fastest all road tires get Continental Terra Speeds in 35mm. If you want something more budget friendly Gravelking SS

Rather road, gravel, forrest?
I would get something puncture proof to skip disappointments in the Beginning.
(I love my 38 Pathfinder…had the 42 before and the felt a little too wobbly(which depends on the rim maybe))
