As the title suggests, I can’t seem to be able to tighten the cable without it falling off the arm, I don’t know what to do. I have put it under but it always seems to slide off.

You’ve routed the cable incorrectly.
You can ignore the little tabs that look like cable guides. Those are only if your front derailleur cable comes up from the bottom.
In your case where the cable drops down from the top, you route it like the bottom image in this. https://i.imgur.com/NWKxk38.png
