Had my bike for a few years now, nothing fancy at all but I can’t seem to want another bike, this is fine for me, but I want more?
I have done some minor things, bars, grips, pedals and stem
What else should I do? A wheel and fork swap and add disk brakes?
Please give some suggestions

I wouldn’t put any money into that. It’s time for a new bike.
Time for a new bike. A new wheel, fork and brakes will cost at least 3x what your bike is worth.
please make sure the front quick-release is installed properly, the way you have it in that picture is unsafe.

its a used bike buyers market, you are going to be able to find a good bike for as cheap as you are ever going to find. Unless you are only riding greens and tarmac, get a nice used full suspension. it might be useful for us to know what kind of riding you do or examples of the trails you ride we could give you a more educated suggestion.

I assume discbrakes at the back might be an issue. Are there discbrake mounts on the seatstay?
