Is the Canyon ultimate CF SL 7 worth it as a first bike, or should I go with the Endurace 7 AL ?

I’m looking to buy my first road bike and I’m torn between two models. I’m 21 years old, 1.88m tall, and plan to ride about 60-80 km max per session. Here are the options I'm considering:

1. *Canyon Ultimate CF SL 7 with 11-speed Shimano 105 R7000 SS *: Priced at 1900€
2. Canyon Endurace 7 AL with 12-speed Shimano 105 R7100: Priced at 1550€

Given the price difference and my riding plans, which bike do you think is the better deal? Are there significant advantages to the CF SL 7 that would justify the extra cost, or is the Endurace 7 AL a more sensible choice for my needs? Any advice or personal experiences with these bikes would be greatly appreciated!
