hello sorry about that I was a couple of minutes late um just trying I didn’t realize I needed to press go live um I’m just going to get this set up kind of managed to get you in a in a better just making a bacon here going to keep a lot of customers out of the view um good morning heners um so yeah basically I’m fully prepped today got enough for uh I think 80 I got 85 dough balls on board it’s a sunny day hopefully I’ll be able to get rid of all of it we’ll see um it’s so far it’s been quite quiet sometimes it can give busy from around 11-ish we’ll see hopefully it will and um yeah I got Wicked veggie one on uh it’s I call it the veggie Peddler so it’s a margarita base with some roasted Peppers some olives and then I finish it off after the bake with a vegetarian and nutree pesto which is in a squirty bottle and um it’s proper fresh proper nice so uh let’s have a look oh no the train strike on sorry dude um have your all right okay I’m going to try and answer some questions but they fire away pretty quickly so go ask me a question anyone got a question for me have you ever thought about collaborating with other food trucks to explod from I do heners I do collaborate with other people I’ve actually got one coming up soon I’ve do it all the time with the other Traders here and Traders locally uh what do I do with leftover dough balls they generally is anything left over if there is I’ll bake it take it home or I’ll just Chuck it uh how many bows today 85 uh hydration for a beginner check out my whole my other video of my whole do process I’d say stick around the 60% range it’s easy easy to man easy to use Easy to handle um and that’s classic neopol is around 60 miles per gallon on this one uh probably about 12 maybe 9 to 12 it’s not a lot um what’s in your tomato sauce just crushed tomatoes and salt that’s it I’m going to do a video on how I make my sauce it’s really simple what’s the largest order you’ve ever had uh street food wise I think it was 24 pizzas just uh on the market which was horrendous um can you buy the knife you use no it was custom made um but if you want a Custom Knife check out cutle Brook knives he makes amazing stuff uh before you started what Heap experience no I was just a home pizza maker before I started um just did this at home and then kind of got better I guess um have you ever used a wood pellet oven uh yeah back in the day not the best of pizza they they get really hot and really cold and it’s really hard to regulate uh what’s your view on a stuffed crust I’ve done stuffed crust I love a stuffed crust pizza any other questions keep them going keep them coming keep them coming can you explain a need for the uniquea blue 10% in your dough mix uh basically uh the uniquea my dough my dough uh recipe I I add the uniquea just to push my I haven’t found just one single flow that I like to use so I use the z00 flour than napolitana 00 and I like to just be able to push the fermentation a little bit longer than it should go um and I need it to be a little bit stronger than I want it so I add a bit of the newa blue and it just actually gives it a little bit more flavor uh goes a bit further and um it just adds a bit of strength so I put 10% in that video my my dough process but today today’s dough has like 15% in it cuz it was very warm it’s going a bit longer I need it to you know last a bit longer it’s 40° currently in here as well so it’s it goes quite crazy in here once I get it out the cabinet um so yeah uh dough stretching Pizza vid I’ve actually just done one in the van I just did a whole how I stretched the dough which I’ll be editing and putting it out at some point um let’s have a look uh beginner would be the better balance or professional pill oh man the pro pill someone just asked that question the pro pill is the one this one here this is the standard this is great this one fits in the oven if you’re using the Neo Arch as well um so the the large the larger version the 14 in or 36 CM won’t fit in if you’re using the Neo arches cuz that’s only a 13 cm wide so if you want one that’s going to be able to use with or without it this one can be used in Rock Box it can be used in Arc it can be used in Dome um any other oven it’s 30 cm wide it is a wicked pill I helped do a little development on this one as well super lightweight super nonstick of a any other questions uh our Chef’s lying about their dough recipes some of these crust taste like flap Jacks wo a lot the reason I put my dough recipe out there is is is it’s it’s a simple process and I see a lot of stuff out there that kind of over complicates it um a little bit and it and it and it doesn’t need to be over complicated it’s it’s four ingredients and it’s pretty pretty simple to put them together and in temperature like I said in the video temperature is important um and it’s that’s that’s basically the most important thing as I’m as I’m concerned is is temperature of the dough final dough temperature and how you then adjust that yeast level for that temperature but it’s all on that video that I shot it’s like 50 minutes of me making dough which normally takes me like 15 minutes so watch the video um do you have any other spots to park and sell Pizza Winter Fox um yeah I can do um I I’m on my chter market so I pay a pitch fee to be here um it’s currently £ 6450 um to be here for the day um and that allows me to just pitch up sell my stuff and disappear um it’s essentially just a spot so where do I take the electric power from uh so my van I can’t I actually spoke about this on a video that I’m going to update upload um my van has an inverter system it has a victron inverter in the front behind this wall um and basically it’s a 3 Kow inverter and I have leisure batteries so I have batteries underneath in this corner right in the corner of the van over there I can run fully off- grid refrigerators lights everything on the charging phones I’ve even got my little AC unit which you can probably hear this little hum coming from behind um it’s it’s putting cool air on me um I can run that I can run everything for about 15 to 16 hours completely off- grid um which which is awesome and I didn’t want to ever have to have generators or rely on an electrical hookup somewhere can I use the Rock Box in interior I’m guessing that’s inside no don’t use the Rock Box inside um uh love to con mate thanks for you for home use when making pizzas what underground do you suggest when making huh well I don’t really understand that question sorry kapu ARA flare I I I’ve never used it so I can’t really comment on that sorry will you open a restaurant I’m not interested in open a restaurant uh any future videos we can expect to see yeah what do you want to see little little shark one let me know um what do I think of pineapple and pizza I I don’t like it um brilliant um any advice on turning the pizza in the rock box with the Turning pill yes right I’m going to cover that question hold hold far on the questions right so you got your turning pill here okay uh it’s the first turn is the hardest okay so what you want to do when if you got pizza in there you want to get underneath get to the back just Edge it under slowly get to the back and break the seal of the whole pizza and then what it is it’s like a pivot point right say this is the edge of the oven here what you want to do you want to use I mean I like to use the the mantle but same with the edge and basically you’re using it as a pivot point okay and you’re tilting the pill and you’re basically just moving it in and out whilst doing this motion okay okay if I get a pizza box for example you can do this with anything you can do it really good thing to do this is a tortilla wrap okay so have a cold oven and practice in your oven if You’ got rock whatsoever and basically get get it underneath and essentially you’re tilting one side down and you’re just pulling towards you you look at that and it’s hard to show you the beat Bo but and you’re just pulling towards you and you’re pushing it back in and what’s going to happen sorry there’s a helicopter going above what’s going to happen is that that edge is going to grip okay and you’re just doing this motion okay so it’s basically Pivot Point tilt one side down and do that motion so it’s just this kind of like tilting it from side to side just practice tortilla wrap in your oven or on a surface with your pill using that utilizing the edge of the oven as a pivot point and it’s just that Mo really it it can be quite simple I I I will I’ll try and break it down in another video um the one I actually just shot kind of does it as well um I I just did a video on how I open the D and do the slap method and stuff like that so uh could you cook pizzas on gas barbecue on a pizza stone you could but it’s not the best thing to do you won’t get a neop poen style during that uh if you couldn’t afford your van would you consider a cheap fixed location um uh I kind of built up to this van so you know no one I wouldn’t be surprised if someone was to buy a van like this straight off the bat um but I I’m just never I’m not interested in a fixed location I like being mobile I like Vans I like moving around so any other questions which pan you use to roast things in the oven what temperature um I’ve got a selection of pans I use um uh cast iron is greatz it’s high heat um quite easy to maintain as well I find but I I have like a hard enameled pan Which I use for roasting like a lot of things um it seems to not warp it seems to hold the temperature so um so that’s one uh yeah I’m a soul Trader um someone just asked that question uh you mentioned before about the W on the flow loo um where can you find that information you’re probably going to have to head to the flower maker website and check the specs it’s generally going to be on their websites if it’s a proper th Peter flour um where’s your sour spoon from this is a lily quid dropo um Pizza spoon um G metal do one as well uh it’s basically like flat bottom kind of Ladle uh Lily Koyo are the same people that make this a lot of people ask me about this see that Lily Koy po um they make spatulas this is a 10 cm spatula for anyone you can use anything you can get plastic ones of these you can get one from a hardware store um just make sure if you’re getting one that’s not too sharp um these are great cuz they have like a slightly rounded edge and a Sharper Edge and it’s not going to take um it’s not going to take the plastic off the tray basically um but yeah I I use a plastic one of these for when I’m at home cutting a d I might have a customer one second why not second I think I do have customers hold on hi there how are you okay okay of course you now and that’s it so there they go guy here he is the free pizza man who who’s managed to get black free pizzas every week for someone recognized him walking down the road as the guy who gets the free pizzas so that’s crazy anyway what’s it going to be you you paying today I am yes margar just a couple minutes how funny is that someone recognized him that’s hilarious it isn’t oh sweet I thought at least that’s two more customers for thank you yeah that’s that’s brilliant power of YouTube oh that veggie was it the veggie special you did last week yeah yeah oh really nice I can’t I can’t even absolutely awesome but yeah cuz the the the menu is fairly meat heavy um so it’s nice to have a permanent I mean this one I’ve always wanted that that that veggie pedler one to be a permanent addition yeah the problem is it takes up too much space in in the topping fridge uh with all the bits so it’s um yeah it’s hard to put it on as a permanent sounds nice it’s lovely yeah really fresh I mean it’s no pedler but try that next time it comes around yeah you know what it comes around it’s one that I I offer it when I do like private events like parties and weddings it’s a really good vegetarian one people people often sort of don’t they when they try cuz it’s cuz it’s to slice it then they’ll try everything and they realize it’s really nice so I can make a really good vegan pizza off the back of it cuz I’ve got all the top cuz I’ve got the olives I got the the peppers you know and um I can just make a really nice veggie one like vegan only love your day today isn’t it beautiful weather yeah sold out an hour and a half and then we had a guy who was from Naples who happened to be at the Fate came back and bought two and he was like these are amazing it was a real booster but yeah as you can imagine it’s sort of basically the way I’ve always said to people like if if you would be happy buying it then you’re probably ready to sell it yeah like consider it good that feeling of selling one though is the best I mean I’ve worked in electrics for like 15 years I wish I could quit and just do this but mortgage kids things like that yeah yeah but we’ll we’ll get there I think slowly surely it it I think it’ll probably become quite I mean is your books getting filled up in the summer yeah we’ve got quite a lot of weddings so yeah yeah quite L weddings which are stressful but amazing when you’re the only food in the evening need to worry you got back yourself you yeah get a few how how long have you been doing it say um this is our second year now okay so you had a few 50 g little portions it ain’t going to last that long I don’t like I wouldn’t freeze it really can do but um try go to your local ssbd if it’s a big one inst install Bakery and ask them say have you got generally they used to give it to me just nothing 50 g is 20 um Fair than that are you local no okay I’m working a bit okay um um find just find a loc a local Baker and ask them if not you can you know they’ll generally just give it or even if you’ve got a pizzeria where about some ining thank you cheers thank you nice to meet you okay cool down there down there HQ yeah I know yeah if you’re down that way give me a show yeah I mean I was a couple of weeks ago I know I saw you camping yeah I’ve been following you for about five six years wow um when you when you had your push bike wow yeah a long time ago so basically if there’s a pizzeria local to you just go in there and ask them say hey have you got any fresh yeast I can have yeah um and they’ll probably they’ll probably have it and be able to fix you up I going to ask you as well when you do the dough can you freeze it you could you could it’s not going to be at its best if you want if you’re going to freeze it you kind of need to change the process a little bit you’re going to want to add a little bit more yeast okay um cu the freezing process can can basically essentially kill off some of that and um you want to a bit of oil in it okay um but ideally best thing to do instead of freezing the dough if you make too much just cook it and freeze the entire Pizza okay so actually cook off like a margarita like just or just a marinara and freeze that right and then when when you then heat it up in the oven with put all the toppings on it and just heat it from Frozen just cook it in your home oven just reheat for Frozen cuz then then if the Dough’s perfect then and there that’s when you want to do it and you get more practice then rather than cuz frozen dough is never home Frozen yeah it’s not going to be the same no that’s fair enough yes s oh are you can I get a Marinaro please yeah cool just below is there any allergies or vegan or are you just a purist yeah nice thank sorry guys it’s got pretty busy get hot in it and they do need a small amount of reset you can’t just fire pizza after Pizza all day long in these others they need they need a very small amount of reset time and that’s what that was essentially moving it to the other oven because i’ sat Heat at the top of the stone and so if you see me do that that’s why this everyone yeah one succeed suceed what’s it going to be yeah being can I
