Hi guys im a novice rider looking to buy my first road bike (coming from a 2015 Giant fast road) but im having difficulties deciding between these 2 canyon models. Other than having an additional sprocket, what additional features do the new R7100 have over the Older R7000 to justify this price increase. The 3.5k model also has an intergrated cockpit which im not a fan of and a better wheel set which im planning to change in the future anyways. They also have different forks which im not sure what are the practical differences are between them. Should i just get the 2.8k model and upgrade the wheel set to a carbon one with the money saved ?

Yes, you should get the 2.8k model.
11 speed vs 12, that’s really the difference. That’s a personal preference but tbh having had 11 and 12 speed bikes for a while it’s a difference I can’t really tell. The R7000 family is one of the greatest groups of all time in terms of performance & reliability per dollar, so I would take that as the default and just consider the 12 speed if you really think you need or want it
The r7000 is just as good as the r7200. For the price difference, the former is a no brainer.
