Took the bike out for its first longer ride and the bottom read derailuer pulley wheel is tightening, therefore seizing the chain. I just keep stopping, loosening it and then keeping on going. Any ideas?
The pulley wheel should still be able to turn even with the bolt properly tight (~3Nm torque).
There should be a bushing inside the pulley wheel (more expensive ones have a ball bearing), maybe it’s completely seized up or missing? Have you taken out the pulley wheel to take a look?

Thank you! Yes both wheels were not spinning well, so the extra sidewards pressure was causing them to seize. and good to know!
