You might find this helpful. I upgraded my 3×10 to a 1×11, showing the gear range comparison. And a few of our other bikes. It also shows a 3×8 upgrade to 2×11.
maybe check out Shimano CUES? seems to very customisable with ratios. drop, flat bars etc
