I've seen many videos of people bikepacking through Europe with a tent, yet most European countries prohibit wild camping (see this guide). How do bikepackers navigate this? Do they simply pitch their tents discreetly and hope for the best? Have any of you encountered law enforcement or received fines for wild camping?
Coming from Norway, where wild camping in uninhabited forests and grasslands is common and legal, the idea of such restrictions feels quite strange.

Depends on every country. Most people seem to pitch late in the evening and clear out early in the morning to avoid most people. Also as far away from roads and paths to avoid being seen.
